YOU MIGHT HAVE thought that the taco fries pizza invented last year was the height of fusion cuisine that this nation could produce.
But now we have a new contender in 2016 - bacon and cabbage chips:
Limerick chef Diarmaid O’Connor came up with the idea yesterday, and he tells DailyEdge.ie how it all happened:
I made them at work. The weren’t actually on the menu, I just threw it together as a snack during a lull in service.
I just used a slice of bacon from what I was serving for lunch. But leftovers would do just fine if you want to make it at home.
I’m glad people are interested in it. I’ve a dream to own a catering van, selling people’s favourite mammy dinners, but on chips. In the same style as dressed fries (taco, curry cheese garlic cheese fries etc.)
