ON MONDAY OF this week, a brand new pizza place opened in Rathmines – and it’s already been turning heads.
It’s called Tiger Wood Fired Pizza and it’s located bang in the centre of Rathmines.
And the pizzas look very good
In the mornings they do pastries, sandwiches and coffees
And then the real pizza business gets going in the afternoon and evenings
They certainly put a lot of prep into each individual pizza – as this handy diagram on the wall shows
And they mean business with the base:
We use an ancient traditional technique to create sour dough bread to form our bases. Our sourdough is made using a levain dough process and takes 7 days to grow. After 7 days we have live levain culture, a living breathing organism that produces natural yeast (no artificial or manufactured yeast here!). We then process this culture into a liquid starter which sits for a further 24 hours to prove before its ready to be separate into individual balls.
The interior has some class street art on show too
Looks like some spot for a delicious feed
