DUBLIN’S FIRST COOKIE shop will be opening soon in the Liberties.
The Dublin Cookie Co will be opening their first shop on March 5 and will go into the unoccupied premises on 29 Thomas Street.

Co-founder Elaine Cohalan told DailyEdge.ie that they are moving their entire production operation to the site, so cookies will presumably go from the oven straight into your face.
They’ll be selling their whole range of specialist cookies, cookie sandwiches, with coffee from Coffee Culture and tea from Clement and Pekoe. Homemade milk flavours will also be available, if you’re more of a milk and cookies type.
Choose from their in-house nut milk, almond milk, or a flavour such as strawberry or chocolate.
The cafe will mostly be take out, but there promises to be a few seats for the loiterers. You can even grab some cookie dough and make some at home, if that’s your thing.
Elaine told us that her partner Jenny Synnott has been working on the recipe for a while now, devising methods from the States to make American-style soft and chewey cookies you won’t get elsewhere in the city.
What we’re really about is people coming together to create happy moments over a cookie, happy times is our ethos.
At the launch, you’ll have to pick from the Dublin Cookie Company’s massive selection of flavours, but we’re told plans to make your own is on the way.
