Wrecked? Hungover? Here's how to hack your breakfast

Want a delicious breakfast but don’t have the energy? We’re here to help.

IT’S THE MOST important meal of the day, yet it comes upon us when we’re most tired or stretched for time.

Anything that makes our life a bit easier in the morning is welcome. Here are some delightfully simple ways to hack your breakfast routine and give yourself a few more minutes in lovely, lovely bed.

Two minute scrambled eggs

Two eggs, a splash of milk. Beat together and microwave for 45 seconds, pause to stir, and in again for 30 seconds.

Or…take five more minutes and make it into a burrito

Scramble the eggs as described above. Whip out  a wrap, add Mexican deliciousness (avocado, cheese, salsa, sour scream, beans, etc) and pop in the eggs.

Voila. Quick and easy breakfast burrito.

Omelette kits

If you’re strapped for time in the mornings, why not make your life a bit easier with some pre-preparation?

Make up baggies of your favourite diced vegetables on a Sunday evening. Fry them up if necessary, then add them to a lunchbox.

Inside that lunchbox, place a slice of cheese, the eggs you’ll use and whatever else you want to put in.

You can also FREEZE smoothie ingredients

Peel, chop and put together in a Ziploc bag all the fruit and bits you want to use for your smoothie.

One bleary-eyed morning, all you’ll have to do is bung them all a blender and it’s done. Bonus: it’ll be frozen fruit, so will be like a healthy morning slushie.

60 second choc-chip muffin

These muffins are made in the microwave in little ramekins. It might not be good news for our waistbands that we can now get muffins at a minute’s notice.

Crispy bacon trick

Don’t be sceptical about cooking rashers in the microwave. Placing the rashers on top of a bowl enables the grease to trickle off, giving you perfectly crispy bacon. Find the full explanation here.

Make your own cereal bars

All you need is cereal, marshmallows and a bit of oil. A cheaper, more fun alternative to brand name cereal bars. Perfect for kids – they’ll love making them AND eating them. Full recipe here.

Cereal sundae

If you don’t have any eggs or bacon to hand, but still want a jazzy breakfast, allow us to show how to hack simple cereal.

Make your cereal in a to-go container and replace milk with vanilla or lemon yoghurt. Bran flakes would work best, but your own favourite cereal is good too. Mix in chopped nuts, fresh or dried fruit, syrup, honey and layer them into a sundae.
