DUBLIN WOMAN DERVAL Mellett is reinventing the marshmallow.

She’s taking something that you associate with being either pink or white and a uniform flavour, something you possibly call a ‘flog’, and turning it into a delicacy.

Flavours like strawberry and Madagascan vanilla, lemon, peanut butter and dark chocolate and passion fruit and coconut set them apart from your usual flog.

And aside from the range of flavours… they’re just so HUGE AND FLUFFY.

Delish Melish marshmallows have been available at various markets and events like Farmleigh, Terenure over the past few months. They’ll be on sale at the CHQ Christmas market (which starts this Thursday. It’s beginning to look a lot like….) and at Farmleigh every weekend in December.

Mellett also makes flavoured and coloured meringues. Couldn’t you just… er… eat them up?

She told DailyEdge.ie that she’s working on a new line of products ” ready to hit the shops in the New Year”. Marshmallow heaven.
