WE AS A NATION are fond of the sauce. Not alcohol (though we love that too) but actual sauce.
How do we love curry, gravy, ketchup and mayo, you may ask? Let us count the ways.
1. There’s the simple fact that this exists
A sauce selection box. Sauce. Selection. Box.
2. And also the fact that sauce is a cornerstone of many Irish meals
A roast needs gravy. Ham needs white sauce. And even if the sauce doesn’t come with the meal, you’ll douse the thing in ketchup (red sauce) until you are satisfied.
3. Chips? They’re just a vehicle to get sauce in our mouths

Anyone who actually chooses to have dry chips is regarded with suspicion. Yep, we’re calling them dry chips.
4. Sweet chilli sauce has become the alternative symbol of the boom years
“What’s this? A new sauce? To put on our paninis?” *throws SSIA money at it*
5. And garlic sauce is now practically a religion
Is it possible to be anything but happy when you have chicken goujons and garlic sauce? We don’t think so.
Even though some people don’t agree:
6. This is one of things Irish emigrants miss the most
Yeah, they’d love to see their families and friends and stuff. But the CURRY.
7. There are debates over which sauce is better with a spice bag
Curry or satay? Which one are you?
8. And the saucy struggle between roll eaters and deli workers is well-documented
It can go one of two ways:
1) “A little more, a little more… oh god that’s way too much.”
2) “A little more, a little more… ah CHRIST that’s no sauce at all.”
Rolls with the perfect amount of sauce on them are cherished.
9. We’re constantly innovating in this field
Didn’t we give the world Ballymaloe relish? Aren’t we responsible for taco sauce, that isn’t even used on tacos?
10. And finding new ways to use it
“Cheese? Boring. Put sauce on it.”
11. May Ireland’s taco sauce/curry/red sauce reserves never run dry
That would probably be the thing that sends us over the edge. As long as we have sauce, we have hope.
