And it’s…wait for it… MOZZARELLA!

According to a new study published in the Journal of Food Science, mozzarella is the best pizza cheese because it “melts, bubbles and browns” better than any other cheese.
(The full title of the study is ‘Quantification of Pizza Baking Properties of Different Cheeses, and Their Correlation with Cheese Functionality.’ Cheese functionality.)
Just look at it there, bubbling away.
Fox reports that the scientists used special cameras and software to measure the amount of bubbling, browning and oil content in various cheeses.
Cheddar browns nicely, but it doesn’t have the same stringy, elastic quality as mozzarella, so no bubbles.
So mozzarella wins, but the scientists say it’s OK to pair different cheeses with it for a “sharper flavour”. Like we didn’t already know. Four-cheese pizza, anyone?
