AH, THE HUMBLE chicken sandwich — the more homespun, healthy cousin of the chicken roll.

While chicken sandwiches can often be disappointing affairs (see: every pre-packed chicken and stuffing sandwich in the history of man), they can be delicious and comforting when done right.

The filling is simple: rotisserie chicken with mayonnaise, Dijon mustard and a mixed leaf salad on sourdough. No frills, no unnecessary add-ons. Just the trappings of a perfect sandwich.

Yesterday we may have splashed out on Dublin's best chicken sandwich. Rotisserie roasted chicken on fresh slices of white bread with rocket, butter and French mustard. Pop into @avocaireland's basement on Suffolk St. to try it out for yourself. Pretty expensive, as you can see, but a really worthwhile treat once in a while.... #pouletbonnefemme #roastchicken
